Using a hand filter such as the CHEMEX®, the V60 pour over or the Clever dripper is probably the most timeless ways of preparing coffee. Its definitely not uncommon to find an old Melitta pour over brewer standing around in an old summer house or up in an Alp hut and why would it be? Its a fast, simple and a cheap way to make super aromatic coffee. This Blog post is dedicated to probably the most beautiful coffeemaker to ever be made; the CHEMEX®. Not only is it impeccably designed but it is also highly engineered by the eccentric German chemist Dr. Peter Schlumbohm in 1941. During his career as an inventor Dr Schlumbohm developed over 300 patents in everything from vacuum bottles, cocktail shakers to automobiles but always sharing one focus, to be functional and enjoyable to use. When developing the CHEMEX® his background in chemistry really came to hand when he brilliantly figured out how to bring out the best extraction of flavour and caffeine out of the ground coffee using the same high quality glass used for lab ware that wouldn't affect the flavour but also provide a pleasant and timeless design. Not only has the CHEMEX® been recognized and awarded in the coffee community, but it can also be found in design museums throughout the world and is included in the permanent collection at the Museum of Modern Art MOMA, NY.
We can definitely see why it has become such an icon piece of design but is it such a hit when making filter coffee? Well, to be really honest... YES!! Whether it actually lies in how its developed to bring out the best taste in coffee or if the design and feeling when you hold and brew your coffee in this beauty is hard to tell. But fact it, it truly gives that extra feeling of luxury when you pour a cup of coffee from a Chemex. Similar to when you decant a good bottle of wine, let it breath and serve it into big wine glasses. Its probably a combination of both design and engineering and thats what makes it so great.

Chemex 8 cup
Equipment needed: Chemex 8 cup, chemex filters, grinder, digital scale and delicious coffee beans.
Dampen the paper filter and pour out water again
Freshly grind 40-45g of your favourite medium roasted coffee. Grind semi-coarse for regular hand filter.
Boil water to approx 92°C, put. Chemex with ground coffee on the scale and press Tare. Let the ground coffee bloom with c.a 150g water or enough so that all grounded coffee is covered for 30sec.
Slowly pour the rest of the water over the blooming coffee grounds so that the total weight of water reaches ca. 700-750g. Let filter until finished.
Remove the filter and gently swirl the coffee before serving in your favourite cup.
